1 medium onion, diced

1 cup panko bread crumbs

Salt & pepper, to taste

8 slices Turkey Bacon
Instructions

Preheat oven to 350°F (175°C).

In a large bowl, combine ground beef, diced onion, egg, panko bread crumbs, milk, salt, and pepper. Mix well with clean hands until fully incorporated.

Divide meat mixture into 8 equal portions and shape each into a mini meatloaf. Place on a lined or lightly greased baking sheet.

Cut each slice of Turkey Bacon in half. Place the halves in a criss-cross pattern over each mini meatloaf, tucking the ends underneath.

Bake for 50 minutes.

Optional: For extra crispy Turkey Bacon, switch oven to broil, place the rack on top, and broil for 3–5 minutes. Watch closely to prevent burning.

You can add garlic, herbs, or grated cheese to the meat mixture for extra flavor.

For a lighter version, use ground turkey instead of beef.

These mini meatloafs freeze well for later use; bake from frozen by adding 10–15 minutes.
