This Mini Turkey Bacon Wrapped Meatloaf is a fun and flavorful twist on the classic meatloaf.   • 3/4 pound lean ground beef

  • 3/4 pound lean ground beef

  • 1 medium onion, diced

  • 1 egg

  • 1 cup panko bread crumbs

  • 1 cup milk

  • Salt & pepper, to taste

  • 8 slices Turkey Bacon

Instructions

  • Preheat oven to 350°F (175°C).

  • In a large bowl, combine ground beef, diced onion, egg, panko bread crumbs, milk, salt, and pepper. Mix well with clean hands until fully incorporated.

  • Divide meat mixture into 8 equal portions and shape each into a mini meatloaf. Place on a lined or lightly greased baking sheet.

  • Cut each slice of Turkey Bacon in half. Place the halves in a criss-cross pattern over each mini meatloaf, tucking the ends underneath.

  • Bake for 50 minutes.

  • Optional: For extra crispy Turkey Bacon, switch oven to broil, place the rack on top, and broil for 3–5 minutes. Watch closely to prevent burning.

Notes

  • You can add garlic, herbs, or grated cheese to the meat mixture for extra flavor.

  • For a lighter version, use ground turkey instead of beef.

  • These mini meatloafs freeze well for later use; bake from frozen by adding 10–15 minutes.
