Ingredients

  • 4 bell peppers, various colors

  • 8 green olives

  • 4 toothpicks, broken in half

  • 2 cucumber slices, cut lengthwise

  • 2 mini bell peppers, sliced in half

  • 2 cups lettuce

  • 1/2 cup shredded carrots

  • 1/4 cup cucumber, cubed

  • 1 radish, sliced

  • Handful of small broccoli florets

  • Dressing of choice (dairy-free ranch or Asian peanut recommended)

Instructions

  • Wash the bell peppers and slice the tops off. Remove seeds and membranes.

  • Place a green olive on each broken toothpick half and insert into the tops of the peppers for eyes.

  • In a bowl, combine lettuce, shredded carrots, cubed cucumber, radish, and broccoli. Toss with your preferred dressing.

  • Evenly fill each bell pepper with the prepared salad.

  • Add a cucumber slice or half mini bell pepper as the tongue. Customize each monster with unique expressions.

  • Place the tops back onto the peppers and serve immediately.
