This Peach Honey Dijon Balsamic Vinaigrette is a sweet and tangy homemade salad dressing that brings freshness to any dish. Made with ripe peaches, honey, Dijon mustard, and white balsamic vinegar, it’s quick to prepare and adds vibrant flavor to salads, vegetables, and even grilled meats.

2 ripe peaches, diced

2 tablespoons honey

2 tablespoons Dijon mustard

2 tablespoons white balsamic vinegar (or cider vinegar)

2 tablespoons extra virgin olive oil

1 tablespoon tamari or soy sauce

1 clove garlic, minced

Salt and pepper, to taste

Instructions

  • Wash the peaches thoroughly. If desired, grill them for two to three minutes on each side for a smoky flavor. Alternatively, dice them fresh for a lighter taste.

  • Place the diced peaches, honey, Dijon mustard, vinegar, olive oil, tamari (or soy sauce), garlic, salt, and pepper into a blender or food processor.

  • Blend until smooth and creamy. Check the texture; if it is too thick, add a splash of water or vinegar and blend again until it reaches the desired consistency.

  • Taste the vinaigrette and adjust seasoning with extra honey for sweetness or vinegar for tanginess.

  • Transfer the vinaigrette to an airtight container or jar with a lid.

  • Refrigerate until ready to use. The dressing can be enjoyed immediately but tastes even better after resting for one hour to allow the flavors to deepen.

  • Shake well before serving, as natural separation may occur.
