- 1 cup all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 cup creamy or crunchy peanut butter
- 1 large egg
- 1/4 cup jelly or jam (your choice)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt; set aside.
- In another bowl, cream softened butter with granulated and brown sugars until light and fluffy.
- Mix in peanut butter until fully combined; add the egg and mix well.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Drop spoonfuls of dough onto prepared baking sheets; create an indentation in each cookie for jelly.
- Spoon jelly into each indentation and bake for 10-12 minutes or until edges are golden brown. Let cool on wire racks.
