- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup brown sugar
- 1/2 cup creamy peanut butter
- 1/3 cup your favorite jam or jelly
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, mix rolled oats, flour, baking soda, and salt.
- In another bowl, cream together brown sugar and peanut butter until smooth. Add eggs one at a time.
- Gradually combine the dry ingredients into the wet mixture until well mixed.
- Scoop tablespoons of dough onto the prepared sheets, flatten slightly.
- Bake for about 12 minutes or until edges are golden brown. Cool on racks.
- Spread peanut butter on half the cookies and jelly on the other half; press together to form sandwiches.
