- 1 cup almond flour
- 1 cup all-purpose flour
- ½ cup powdered sugar (plus extra for rolling)
- ½ cup unsalted butter, room temperature
- ⅓ cup raspberry jam
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, all-purpose flour, and powdered sugar. Add butter and vanilla extract; mix until you form a soft dough.
- Scoop about one tablespoon of dough, flatten it in your palm, place half a teaspoon of raspberry jam in the center, fold the dough around it, and roll into a ball.
- Arrange cookie balls on the prepared baking sheet, leaving space between each. Bake for 12-15 minutes until lightly golden.
- Cool for five minutes before rolling each cookie in powdered sugar to coat well.
- Transfer to a serving platter and enjoy!
