- 2 cups ripe tomatoes, diced
- 1 cup English cucumber, thinly sliced
- 1 cup crumbled feta cheese
- ½ red onion, thinly sliced
- ¼ cup fresh parsley, chopped
- 3 tablespoons extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Wash and dry the tomatoes and cucumbers. Dice the tomatoes and slice the cucumbers.
- Thinly slice half of a red onion. Soak in cold water for a milder flavor if desired.
- In a large bowl, combine diced tomatoes, sliced cucumbers, red onion, chopped parsley, and crumbled feta.
- Drizzle olive oil and lemon juice over the salad mixture. Gently toss to coat.
- Season with salt and pepper to taste; mix again.
- Chill in the fridge for about 20 minutes before serving for optimal flavor.
