  • 1 cup crumbled feta cheese
  • ½ red onion, thinly sliced
  • ¼ cup fresh parsley, chopped

Instructions

  1. Wash and dry the tomatoes and cucumbers. Dice the tomatoes and slice the cucumbers.
  2. Thinly slice half of a red onion. Soak in cold water for a milder flavor if desired.
  3. In a large bowl, combine diced tomatoes, sliced cucumbers, red onion, chopped parsley, and crumbled feta.
  4. Drizzle olive oil and lemon juice over the salad mixture. Gently toss to coat.
  5. Season with salt and pepper to taste; mix again.
  6. Chill in the fridge for about 20 minutes before serving for optimal flavor.
