- 12 oz pre-cooked chicken sausage, sliced
- 1 cup bell peppers (red, yellow, green), sliced
- 1 medium zucchini, sliced into half-moons
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 2 tsp Italian seasoning
Instructions
- Slice the chicken sausage into bite-sized pieces. Chop the bell peppers, dice the onion, and slice the zucchini. Mince the garlic.
- Heat olive oil in a large skillet over medium heat.
- Sauté onion and garlic until fragrant (about 3 minutes), then add bell peppers and zucchini.
- Once veggies soften (about 5 minutes), stir in chicken sausage.
- Sprinkle with Italian seasoning; cook for another 5 minutes until heated through.
- Serve warm on its own or with rice/quinoa.
