For the Watermelon Fries:

  • 1 mini watermelon (sliced into 1-inch sticks, rind removed)

  • 3 tablespoons chili lime seasoning (such as Tajin or any chili lime blend)

For the Coconut Lime Dipping Sauce:

  • 1 cup plain unsweetened yogurt

  • 1/4 cup full-fat canned coconut milk

  • 2 tablespoons light agave

  • Juice and zest of 1 lime

Instructions

  1. Slice both ends off the mini watermelon. Stand it upright and cut off the rind.

  2. Slice the watermelon into thick slabs, then cut into 1-inch wide sticks, like fries.

  3. Arrange the watermelon sticks on a platter.

  4. Sprinkle chili lime seasoning evenly over the watermelon fries. Flip and repeat for full coating.

  5. In a small bowl, mix yogurt, coconut milk, light agave, lime juice, and lime zest. Stir until smooth.

  6. Transfer the sauce to a serving bowl.

  7. Serve immediately, or chill the fries and sauce for 10 minutes before serving.
