Ingredients

  • 3 cups flour

  • 1½ cups granulated sugar

  • ¼ teaspoon salt

  • Zest of 1 large lemon

  • ½ cup unsalted butter, cold and cut into cubes

  • 3 large eggs, slightly beaten

  • 4 cups fresh strawberries, halved

  • 1 tablespoon fresh-squeezed lemon juice

  • 1 tablespoon cornstarch

  • ¾ cup granulated sugar

Instructions

  • Preheat the oven to 350°F. Line a 9×13 baking dish with parchment paper, leaving overhang to lift the bars later.

  • In a stand mixer, combine flour, sugar, salt, and lemon zest. Mix on low speed until blended.

  • Add the cold butter and mix until the mixture forms pea-sized crumbs.

  • Add the beaten eggs and mix until the dough becomes crumbly but holds together when pressed.

  • Press two-thirds of the dough evenly into the bottom of the prepared baking dish.

  • In a separate bowl, mix the strawberries, lemon juice, cornstarch, and sugar until combined.

  • Spread the strawberry mixture evenly over the crust.

  • Crumble the remaining dough over the top of the strawberry filling.

  • Bake for 45 to 50 minutes or until the top appears slightly golden brown.

  • Allow the bars to cool completely before lifting them from the pan and slicing.

Notes

You can substitute strawberries with other fresh berries or a mixture of berries for a different flavor. Letting the bars cool completely before slicing ensures clean cuts and the best texture.
