3 cups flour

1½ cups granulated sugar

Zest of 1 large lemon

½ cup unsalted butter, cold and cut into cubes

3 large eggs, slightly beaten

4 cups fresh strawberries, halved

1 tablespoon fresh-squeezed lemon juice

1 tablespoon cornstarch

¾ cup granulated sugar
Instructions

Preheat the oven to 350°F. Line a 9×13 baking dish with parchment paper, leaving overhang to lift the bars later.

In a stand mixer, combine flour, sugar, salt, and lemon zest. Mix on low speed until blended.

Add the cold butter and mix until the mixture forms pea-sized crumbs.

Add the beaten eggs and mix until the dough becomes crumbly but holds together when pressed.

Press two-thirds of the dough evenly into the bottom of the prepared baking dish.

In a separate bowl, mix the strawberries, lemon juice, cornstarch, and sugar until combined.

Spread the strawberry mixture evenly over the crust.

Crumble the remaining dough over the top of the strawberry filling.

Bake for 45 to 50 minutes or until the top appears slightly golden brown.

Allow the bars to cool completely before lifting them from the pan and slicing.
Notes
You can substitute strawberries with other fresh berries or a mixture of berries for a different flavor. Letting the bars cool completely before slicing ensures clean cuts and the best texture.
