- 2 cups all-purpose flour

- 1 cup chopped pecans (lightly toasted)
- 2 large eggs
- 1/2 cup vegetable oil (or melted coconut oil)
- 1 cup whole milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking powder, granulated sugar, brown sugar, and chopped pecans.
- In another bowl, beat the eggs and mix in the vegetable oil and milk.
- Combine wet ingredients into dry ingredients; fold gently until just mixed.
- Pour batter into the prepared loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
