2 cups watermelon, cubed

½ cup red onion, finely diced

1 jalapeño, diced small (remove seeds for less heat)

1 tsp garlic, minced

¼ cup lime juice

¾ cup cilantro, chopped
Instructions

Cube the watermelon into small, bite-sized pieces and place them in a large mixing bowl.

Add the diced red onion, chopped jalapeño, and minced garlic to the bowl. Gently toss the ingredients together.

Pour the lime juice over the mixture and toss again to ensure even coating.

Sprinkle the chopped cilantro on top and fold it in gently.

For the best flavor, refrigerate the salsa for 1–2 hours before serving. Serve chilled.
Notes

Adjust jalapeño to taste for more or less heat.

Fresh lime juice is preferred, but bottled can be used.

Best served the same day for ideal texture.
