1 lb ground beef

1 packet taco seasoning (or homemade blend)

8 small flour tortillas

1 cup refried beans

1 ½ cups shredded cheddar cheese (or mix of cheddar and mozzarella)

1 cup diced tomatoes

½ cup chopped onions

¼ cup sliced black olives (optional)

2 tablespoons olive oil

½ teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro for garnish (optional)
Instructions

Preheat the oven to 400°F (200°C).

Heat olive oil in a skillet. Add ground beef and cook until browned. Drain fat, then stir in taco seasoning, garlic powder, salt, pepper, and ¼ cup water. Simmer until thickened.

Warm refried beans in a saucepan until smooth. Add a little water or oil if needed.

Brush tortillas lightly with olive oil and bake for 3–5 minutes per side until crisp.

To assemble, place one tortilla on a flat surface. Spread refried beans, then top with seasoned beef. Add another tortilla on top.

Spread a thin layer of refried beans or tomato sauce over the top tortilla. Sprinkle shredded cheese, diced tomatoes, onions, and black olives.

Bake for 8–10 minutes until cheese melts and bubbles.

Garnish with cilantro if desired. Slice and serve warm.

You can replace beef with lentils, turkey, or chicken for variation.

For extra crunch, toast the tortillas before assembling.

Use fresh salsa or taco sauce for topping instead of heavy sauces.
