  • 1 packet taco seasoning (or homemade blend)

  • 8 small flour tortillas

  • 1 cup refried beans

  • 1 ½ cups shredded cheddar cheese (or mix of cheddar and mozzarella)

  • 1 cup diced tomatoes

  • ½ cup chopped onions

  • ¼ cup sliced black olives (optional)

  • 2 tablespoons olive oil

  • ½ teaspoon garlic powder

  • Salt and pepper to taste

  • Fresh cilantro for garnish (optional)

Instructions

  • Preheat the oven to 400°F (200°C).

  • Heat olive oil in a skillet. Add ground beef and cook until browned. Drain fat, then stir in taco seasoning, garlic powder, salt, pepper, and ¼ cup water. Simmer until thickened.

  • Warm refried beans in a saucepan until smooth. Add a little water or oil if needed.

  • Brush tortillas lightly with olive oil and bake for 3–5 minutes per side until crisp.

  • To assemble, place one tortilla on a flat surface. Spread refried beans, then top with seasoned beef. Add another tortilla on top.

  • Spread a thin layer of refried beans or tomato sauce over the top tortilla. Sprinkle shredded cheese, diced tomatoes, onions, and black olives.

  • Bake for 8–10 minutes until cheese melts and bubbles.

  • Garnish with cilantro if desired. Slice and serve warm.

  • You can replace beef with lentils, turkey, or chicken for variation.
