1 watermelon (3–4 lbs., cut into cubes)

1 cup strawberries (hulled and sliced)

1 cup fresh raspberries

1 cup fresh cherries (pitted and halved)

2 limes

1 teaspoon honey

2 tablespoons fresh mint (chopped)
Instructions

Slice the watermelon into thick rounds, remove the rind, and cut into medium cubes. Drain excess juice.

Wash and hull the strawberries; slice them into halves or quarters. Add to the watermelon.

Rinse raspberries gently and set aside. Pit and halve cherries; add to the bowl.

In a small bowl, whisk together lime juice and honey until smooth. Add chopped mint and stir.

Pour the dressing over the fruit mixture and toss gently, avoiding crushing the raspberries.

Add raspberries last and toss softly one more time.

Cover and chill in the refrigerator for 20–30 minutes before serving.
