Ingredients
-
4 Cups Watermelon (cubed into 1-inch pieces)
-
2.5 Cups Strawberries (halved or sliced into rounds)
-
2 Cups Raspberries
-
2 Tablespoons Freshly squeezed Lime Juice
-
1.5 Teaspoons Lime zest
-
2 Tablespoons Maple Syrup
-
3/4 Teaspoon Black Salt (optional)
-
2 Tablespoons Mint Leaves (finely chopped)
-
2 Sprigs Thyme
Instructions
-
In a small bowl, whisk together the lime juice, lime zest, maple syrup, and black salt until well combined.
-
Cut the watermelon into 1-inch cubes and place them in a large mixing bowl.
-
Slice the strawberries in half or into thin rounds, then add them to the bowl with the watermelon.
-
Add the raspberries to the bowl, being careful not to crush them.
-
Drizzle the prepared dressing evenly over the fruit mixture.
-
Using a large spoon, gently toss the fruit so that each piece is lightly coated with the dressing.
-
Sprinkle the finely chopped mint leaves over the salad.
-
Add two sprigs of thyme on top for garnish and extra flavor.
-
Serve immediately for the best freshness and flavor.
-
If preparing ahead, store the fruit and dressing separately and combine just before serving.
Notes
-
For extra variety, add cherries, blueberries, or pomegranate seeds.
-
Skip the black salt if you prefer a purely sweet flavor.
-
Toasted nuts or seeds can be sprinkled on top for crunch.
