These Watermelon Lime Popsicles are a refreshing, fruity summer treat made with real watermelon and fresh lime juice. Naturally hydrating and sweet, they’re perfect for both kids and adults on hot days. Optional honey and mint add customizable flavor while keeping the recipe light and simple.

Ingredients

  • 4 cups fresh watermelon, cubed

  • 2 tablespoons lime juice

  • 12 tablespoons honey or other sweetener (optional)

  • A few fresh mint leaves (optional)

Instructions

  • Prepare the Watermelon: Wash the watermelon thoroughly. Cut into wedges, remove rind and seeds, and cube enough to make four cups.

  • Blend the Mixture: In a blender, combine the cubed watermelon, lime juice, honey (if using), and mint leaves (if desired). Blend until smooth.

  • Fill the Molds: Pour the blended mixture into popsicle molds, leaving a small gap at the top for expansion. Insert sticks.

  • Freeze: Place molds flat in the freezer. Freeze for 4–6 hours or until fully solid.

  • Serve: Run warm water over the mold’s exterior for a few seconds to loosen, then gently remove the popsicles and serve.

Notes

  • Adjust sweetness based on watermelon ripeness.

  • Add or skip mint to suit taste preferences.

  • Use silicone molds or paper cups if popsicle molds aren’t available.
