Ingredients
-
4 cups fresh watermelon, cubed
-
2 tablespoons lime juice
-
1–2 tablespoons honey or other sweetener (optional)
-
A few fresh mint leaves (optional)
Instructions
-
Prepare the Watermelon: Wash the watermelon thoroughly. Cut into wedges, remove rind and seeds, and cube enough to make four cups.
-
Blend the Mixture: In a blender, combine the cubed watermelon, lime juice, honey (if using), and mint leaves (if desired). Blend until smooth.
-
Fill the Molds: Pour the blended mixture into popsicle molds, leaving a small gap at the top for expansion. Insert sticks.
-
Freeze: Place molds flat in the freezer. Freeze for 4–6 hours or until fully solid.
-
Serve: Run warm water over the mold’s exterior for a few seconds to loosen, then gently remove the popsicles and serve.
Notes
-
Adjust sweetness based on watermelon ripeness.
-
Add or skip mint to suit taste preferences.
-
Use silicone molds or paper cups if popsicle molds aren’t available.
