-
2.5 cups watermelon, cut into 2-inch cubes
-
1/2 lime, juice and zest
-
1/2 tablespoon tajin
-
1/3 cup cotija cheese, crumbled
-
2 tablespoons fresh mint, finely chopped
-
Pinch of flaky salt
Instructions
-
Cut fresh watermelon into 2-inch cubes, ensuring even sizes for easy skewering.
-
Thread 5–6 cubes of watermelon onto each skewer, leaving small gaps for flavor distribution.
-
Zest half a lime over the skewers, then squeeze the juice evenly on top.
-
Sprinkle tajin over the skewers to add a spicy, tangy layer. Adjust to taste.
-
Crumble cotija cheese and scatter it evenly across the skewers.
-
Sprinkle finely chopped mint leaves on top for freshness.
-
Finish with a pinch of flaky salt. Serve immediately.
Notes
-
For a vegetarian version, this recipe is already suitable.
-
To make it vegan, omit cotija or use a plant-based cheese.
-
You can substitute cotija with feta cheese if preferred.
-
Adjust tajin quantity to your heat preference.
-
Best served fresh but can be prepped and chilled for up to 4 hours.
