  • 1/2 lime, juice and zest

  • 1/2 tablespoon tajin

  • 1/3 cup cotija cheese, crumbled

  • 2 tablespoons fresh mint, finely chopped

  • Pinch of flaky salt

Instructions

  • Cut fresh watermelon into 2-inch cubes, ensuring even sizes for easy skewering.

  • Thread 5–6 cubes of watermelon onto each skewer, leaving small gaps for flavor distribution.

  • Zest half a lime over the skewers, then squeeze the juice evenly on top.

  • Sprinkle tajin over the skewers to add a spicy, tangy layer. Adjust to taste.

  • Crumble cotija cheese and scatter it evenly across the skewers.

  • Sprinkle finely chopped mint leaves on top for freshness.

  • Finish with a pinch of flaky salt. Serve immediately.

Notes

  • For a vegetarian version, this recipe is already suitable.

  • To make it vegan, omit cotija or use a plant-based cheese.
