  • 1 cup heavy cream (240 ml)

  • 4 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 tablespoon all-purpose flour

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried basil

  • 1/4 teaspoon red pepper flakes (optional)

  • 1/2 cup grated Parmesan cheese (50 g)

Instructions

  • In a medium saucepan, heat olive oil over medium heat.

  • Add minced garlic and sauté for 1 to 2 minutes until fragrant but not browned.

  • Sprinkle flour over garlic, stirring continuously to form a roux. Cook for 1 minute.

  • Slowly whisk in heavy cream to prevent lumps.

  • Add salt, black pepper, oregano, basil, and red pepper flakes. Stir well.

  • Cook for 5 to 7 minutes over medium heat, whisking constantly, until sauce thickens.

  • Remove from heat and stir in Parmesan cheese until melted and smooth.

  • Allow the sauce to cool slightly before spreading it over pizza or storing.

Notes

You can adjust the consistency of the sauce by adding more or less cream. For extra flavor, add a bit more garlic or herbs. The sauce thickens as it cools, so if it becomes too thick, whisk in a splash of milk before reheating.
