- 4 boneless, skinless chicken breasts (approx. 1.5 lbs)
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 tbsp fresh oregano, chopped (or 2 tsp dried oregano)
- 4 garlic cloves, minced
- 3 tbsp extra virgin olive oil
- 2 bell peppers (1 red, 1 yellow), sliced
Instructions
- Rinse chicken breasts under cold water and pat dry.
- In a bowl, whisk together olive oil, lemon juice, minced garlic, and oregano until well combined.
- Marinate chicken in a resealable bag or dish with the marinade for at least 30 minutes in the refrigerator.
- Preheat grill to medium-high heat or oven to 400°F (200°C).
- Grill each chicken breast for about 6-7 minutes on each side until cooked through or bake for approximately 25-30 minutes.
- During the last few minutes of cooking, add sliced bell peppers to the grill or oven until slightly charred.
- Serve immediately with any remaining juices drizzled over the top.
