- 1 lb boneless chicken thighs
- 2 cups cherry tomatoes, halved
- 1 cup fresh basil leaves
- 4 garlic cloves, minced
- 2 tbsp extra virgin olive oil
- 1 tsp sea salt
Instructions
- Wash the cherry tomatoes and basil thoroughly. Mince the garlic and set aside.
- In a large skillet over medium heat, add olive oil. Sauté minced garlic until fragrant, about 1 minute.
- Add boneless chicken thighs to the skillet, season with sea salt, and cook until golden brown, about 5 minutes per side.
- Stir in cherry tomatoes once the chicken is cooked through; cook until they soften and release juices, about 5 minutes.
- Remove from heat and fold in fresh basil leaves, letting them wilt slightly.
- Serve on plates, drizzling with additional olive oil if desired.
