- 1 pound flank or sirloin steak
- 4 cups fresh spinach
- 1/2 cup crumbled Gorgonzola cheese
- 2 ears of grilled corn (kernels removed)
- 3 tablespoons balsamic vinaigrette
- 1 cup cherry tomatoes (halved)
Instructions
- Preheat the grill to medium-high heat. Season the steak with salt and pepper.
- Grill the steak for 4-5 minutes per side until cooked to desired doneness. Remove from grill and let rest.
- Grill the corn for 10-12 minutes until charred. Let cool before cutting off kernels.
- In a large bowl, combine spinach, cherry tomatoes, corn kernels, and Gorgonzola cheese. Slice the rested steak thinly against the grain.
- Drizzle balsamic vinaigrette over the salad mixture and toss gently.
- Serve topped with sliced steak.
