- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup fresh pineapple, diced
- 1 cup long-grain rice (white or brown)
- 1 red bell pepper, chopped
- 1 medium onion, chopped
- ¼ cup low-sodium soy sauce
- 3 garlic cloves, minced
- ½ cup pineapple juice
Instructions
- Cut the chicken into bite-sized pieces; season with salt and pepper.
- In a large skillet over medium heat, add oil and sauté the chopped onions and bell pepper until softened (about 5 minutes).
- Add the seasoned chicken to the skillet; cook until browned on all sides (7-10 minutes).
- In a bowl, mix soy sauce, minced garlic, and pineapple juice; pour over the chicken and veggies in the skillet.
- Stir in diced pineapple and cooked rice; mix well and simmer for an additional 5 minutes.
- Serve hot, garnishing with extra pineapples or herbs if desired.
